SPRING ROLLS MASTER

About a year ago, i have been working in a vietnamese restaurant while being in Australia, 
specialize in street food dishes i was mostly on the " roller " duties, 

In rush hour, hundred and hundred Goi Cuon to serve, at this point, I was out of rolling fresh spring rolls and so far from thoses family dayS with my mom, practicing gently how to make the perfect roll. 
From this job in Melbourne, I can notice that vietnamese specialities are changing a lot from the traditional vietnamese way.

In Australia, 


spring rolls are pretty big and topping totally different, in my fast food restaurant we was preparing differents rolls, options  : 
- SOFT SHELLS CRAB - BBQ CHICKEN - OMELET' - PORK AND PRAWN - TOFU - BARRAMUNDI 

All rolls contains vermicellis noodles, fried shallots and coriander, this is the base.

Few options that definitely not exist in Vietnam, customers can choose sauce between : 
NUOC MAM - CHILI MAYO - SOJA - SPICE CHILI 

PRICE :$3.50/piece 


In France,

 spring rolls are same size as in Australia, so that means about 3 or 4 times the traditional one, vietnamese restaurant serves Goi Cuon comes with SWEET CHILI SAUCE and/or FISH SAUCE. 
Friends working in vietnamese venues, and from my memories, French-Vietnamese chef garnish rolls with : 
PORK/CHICKEN - PRAWN - CAROT - MINT - CORIANDER - PEANUT - SHALLOTS - NOODLE

I can easily reconize were come from any rolls only by watching it, 
French one is well presented with a HUGE amount of crush peanut inside, 2 big mint leaves on top.


 PRICES :1.90 EUROS/piece

In Vietnam, 

Goi Cuon are very small and always serving per 3 or 5 pieces, 
They are made fresh from order, only one way and recipe are usually made by the street food sellor. 

Traditional Goi Cuon is serve with a SWEET SPICY SAUCE, inside is : 
PORK DRY SKIN - SALAD -  VEGGIES - PRAWN - BUN

There is many places as " sitting restaurant " you can order fresh springs rolls, the difference between street buying and restauration order is : you have to make them yourself while you are in a restaurant, 
Every ingredients are up to you, free to add or delete somes into your rolls.

Being EURASIAN (episode 1)

Mai'life in France VS Mai'life in Vietnam

"A lot of people being asking how do i feel about being eurasian? 
Do you feel more Vietnamese or French ? 
Where do you from ?
What? You can't speak Vietnamese fluently? How!?
France or Vietnam living preference?"

First, I want to say i'am not more french or more vietnamese in any case, I'm an hundred % eurasian, 
and i m proud of it. 
Vietnam and France are two countries totally different, both got differents cultures habits, lifestyle and i'm so glad to discover both of them. 
Born and living 16 years in France, will make some people say i HAVE to feel more French, 
well(...) not at all, living 3 years in Vietnam open my eyes. I didn't regret anything from moving 
in Asia instead choosing to stay in Europe.

Premièrement, je voudrais dire que je ne suis pas plus francaise que vietnamienne dans aucun cas, 
je me sens cent pour cent eurasienne et très fiere de l'être. 
La France et le Vietnam sont deux pays totalement incomparable, niveau de vie, culture 
et je suis ravie d'avoir la chance de découvrir ces deux-ci.
Née et ayant vécue 16 ans en France, peuvent laisser penser le fait de me sentir plus française, 
(...) pas du tout, après trois ans de vie au Vietnam, cela m'a ouvert les yeux et je ne regrette en rien
mon déménagement en Asie qui m'a permis d'épanouir mes connaissances.

I choose to compare here two most simple dishes from both side, breakfast. 

       FROM FRANCE 

 Bread , butter , nutella , croissant , coffee , milk , fruit.

                                                  FROM VIETNAM

Pho : Rice noodle, beef/chicken, soy sprout, herbs , flavor soup broth.

Passage rapide à Saigon (partie1)


" Co bao nhieu quan ca phe o tp.HCM " (Combien de café shop se trouve à Saigon?) 

Cette question, sans réponse via google, me laisse curieuse, Saigon est la plus grande ville au Vietnam, renommé Ho Chi Minh City en 1976. 
Ho Chi Minh city s'étend sur 22 districts, 7,955,000 habitants et prévois plus de 13.9 millions d'habitants en 2025. 
Après avoir interrogé quelques voyageurs passant par ici, les témoignages sont mitigés, personnelement Ho Chi Minh est la ville que je préfère au Vietnam qui est une ville super dynamique, des petits shop ouvert tard le soir, vendeurs ambulants et motobikes par milliers, j'adore! 

Une tasse de CA PHE DEN (café noir glacé) coûte 10.000VND dans les shop de rue, tandis qu'un CA PHE SUA DA (café au lait glacé) coûte 12.000VND. Les vietnamiens adorent leurs café du matin, avant de partir travailler,
 à Ho Chi Minh city le nombre de petit café est inimaginable !

This question which i try to get an answer, let me curious... Saigon is the biggest city in Vietnam, renamed Ho Chi Minh City in 1976.
Ho Chi Minh City's population is about 7,955,000 citizens and planned over 13.9 millions in 2025, HCMC got 22 districts. 
I have been asking some backpackers travelling here, opinions are fifty/fifty as HCM is a very busy city. As my concern, i love HCMC, all this shop open 24/24h, street sellor and dynamic atmosphere is why i enjoy it everytime.

A glass of CA PHE DEN (black iced coffee) cost 10.000VND in street shop, CA PHE SUA DA (white iced coffee) cost 12.000VND. 
Vietnamese are addicted to this morning coffee they takes before going to work, 
well, coffee store are just not comptable!
