SPRING ROLLS MASTER

About a year ago, i have been working in a vietnamese restaurant while being in Australia, 
specialize in street food dishes i was mostly on the " roller " duties, 

In rush hour, hundred and hundred Goi Cuon to serve, at this point, I was out of rolling fresh spring rolls and so far from thoses family dayS with my mom, practicing gently how to make the perfect roll. 
From this job in Melbourne, I can notice that vietnamese specialities are changing a lot from the traditional vietnamese way.

In Australia


spring rolls are pretty big and topping totally different, in my fast food restaurant we was preparing differents rolls, options  : 
- SOFT SHELLS CRAB - BBQ CHICKEN - OMELET' - PORK AND PRAWN - TOFU - BARRAMUNDI 

All rolls contains vermicellis noodles, fried shallots and coriander, this is the base.

Few options that definitely not exist in Vietnam, customers can choose sauce between : 
NUOC MAM - CHILI MAYO - SOJA - SPICE CHILI 

PRICE :$3.50/piece 


In France,

 spring rolls are same size as in Australia, so that means about 3 or 4 times the traditional one, vietnamese restaurant serves Goi Cuon comes with SWEET CHILI SAUCE and/or FISH SAUCE. 
Friends working in vietnamese venues, and from my memories, French-Vietnamese chef garnish rolls with : 
PORK/CHICKEN - PRAWN - CAROT - MINT - CORIANDER - PEANUT - SHALLOTS - NOODLE

I can easily reconize were come from any rolls only by watching it, 
French one is well presented with a HUGE amount of crush peanut inside, 2 big mint leaves on top.

In Vietnam

Goi Cuon are very small and always serving per 3 or 5 pieces, 
They are made fresh from order, only one way and recipe are usually made by the street food sellor. 

Traditional Goi Cuon is serve with a SWEET SPICY SAUCE, inside is : 
PORK DRY SKIN - SALAD -  VEGGIES - PRAWN - BUN

There is many places as " sitting restaurant " you can order fresh springs rolls, the difference between street buying and restauration order is : you have to make them yourself while you are in a restaurant, 
Every ingredients are up to you, free to add or delete somes into your rolls.
